what you need
- 1 can (15 ounce) chickpeas (garbanzo beans)
- 2 Tbsp. fresh lemon juice
- 1/4 cup chopped onion
- 3 cloves garlic, minced
- 2 tsp. olive oil
- 2 tsp ground cumin
- 1/8 tsp. ground red pepper
- 1/2 tsp. salt
- Crackers and or cut up vegetables
make it
Drain the chickpeas, reserving the liquid. Combine the chickpeas, lemon juice, onion, garlic, oil, cumin, pepper and salt in a blender or food processor.
Puree until smooth, adding the reserved liquid, if needed, to thin the puree.
Refrigerate for 3-4 hours before serving to blend the flavors. Serve with veggies and crackers.
