what you need
- 1 white cake mix
- 1 box (3 oz.) Jell-O Strawberry Flavor Gelatin
- 1/2 cup water
- 1 pkg. (10 oz.) frozen strawberries, thawed & divided
- 1/2 cup oil
- 4 eggs, separated
- 1/2 cup butter or margarine (1 stick)
- remaining strawberries
- 1 lb. box confectioners' sugar

Preheat oven to 350°F. In a large mixing bowl, combine cake mix, Strawberry Jell-O, water, 1/2 of the strawberries, oil, & egg yolks. Mix on medium speed approximately 2 minutes or until blended. Stir in stiffly beaten egg whites.
Pour into oblong cake pan that has been lightly greased & floured. Bake 45 minutes or until done. Cool completely before icing.
Icing:
Blend butter, remaining strawberries, and confectioners' sugar in blender to form a thick, smooth icing. Spread on cooled cake.
Notes
This recipe was given to me by my mother-in-law. If it is baked in a foil pan with plastic cover, it makes a great dessert cake for potlucks or gift giving.
