- Graham Cracker Crust:
- 1 packet (5 1/2 ounce) graham crackers, crushed (about 1 2/3 cups)
- 1/4 cup sugar
- 6 tablespoons butter or margarine, melted
- Filling:
- 3 packages (8 ounce each) cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/2 teaspoon vanilla extract
- Topping:
- 1 container (16 ounce) sour cream
- 3 tablespoons sugar
- 1/2 teaspoon vanilla extract

Combine graham cracker crumbs, 1/4 cup sugar, and butter; mix well. Press graham cracker crust mixture into an ungreased 10-inch springform pan; set aside.
Beat cream cheese at high speed with an electric mixer until creamy; gradually add 1 cup sugar, beating well. Add eggs, 1 at the time, beating after each addition. Stir in 1/2 teaspoon vanilla. Pour into prepared crust. Bake at 375°F for 35 minutes or until cheesecake is set.
Beat sour cream at medium speed for 2 minutes. Add 3 tablespoons sugar and 1/2 teaspoon vanilla; beat 1 more minute. Spread over cheesecake. Bake at 400°F for 5 minutes. Cool to room temperature on a wire rack; cover and chill 8 hours.
