Angie's Breakfast Scramble

what you need
- 1 bag potatoes O’Brien
- 1 pound hot sausage
- 6 large eggs
- 2 cups Kraft shredded sharp cheese
- 1 pkg. fajita size flour tortillas - if you want to make breakfast soft tacos out of it (my preference)

Using medium to large pot, spray bottom of pot with non-stick spray and start potatoes O'Brien on medium temperature with lid on to steam. In frying pan, start browning sausage. When sausage is browned, pour off extra grease and dump sausage into pot with potatoes and stir.
Scramble eggs and pour into frying pan until cooked thoroughly. Pour eggs into pot with potato mixture and stir until well mixed. Keep lid on pot and let cook until potatoes are fork tender. When done, add cheese to pot and stir into mixture.
Serve as is or my preference is to put a serving into a fajita size flour tortilla and serve with hot sauce on it as a breakfast taco, but it is just as good without the tortilla.
