Fish Fillets in Creamy Dill Sauce

what you need
- 4 fish fillets, about 6 oz. each
- 2 tablespoons butter
- 1/4 cup white wine
- 1 lemon: zest & juice half, the other half cut into wedges
- 1/2 cup cream
- 2 tablespoons chopped fresh dill or 2 teaspoons dried dill
- Salt and pepper (lemon pepper works great)

Salt & pepper the fillets. Heat butter in a skillet large enough to hold fish in a single layer. When pan is hot, add fillets & cook about 5 minutes, turn and cook until done. Allow about 10 minutes total cooking time for each inch of thickness.
Remove fillets to a warm platter or warmed plates (put plate and a glass of water in the microwave and heat for 2 minutes).
Add wine, zest, & lemon juice to pan, raise heat to high and bring to a boil. Add cream & dill and boil until sauce thickens. Add salt & pepper to taste and spoon sauce over fish. Serve immediately with lemon wedges on the side.
Notes
Any mild flavor fish such as cod or tilapia brings out the flavor of the sauce.
This is a great meal served with brown rice and your favorite vegetable or salad.
