what you need
- 1 boil in bag brown rice
- 6 red bell peppers (save the tops)
- 1 small or 1/2 bigger onion, finely chopped
- 3 cloves garlic
- 1 Tbsp. extra virgin olive oil
- 1 lb. lean ground beef
- 1 jar tomato pasta sauce
- Enough shredded mozzarella to cover tops of peppers
- Salt and pepper to taste

Preheat oven to 375°F. Prepare boil in bag rice according to instructions on package. Meanwhile cut the tops off of the peppers, and take out the seeds. Cut the red from around the stem. Chop the onion, pepper tops, and garlic. (It really comes nice when you use a mini chopper for this job. I am real sensitive to onion fumes, and cry a river without my chopper.)
Heat up the olive oil in a frying/saute pan. Add the chopped onions, peppers, and garlic. Saute veggies till onions are translucent. Add the ground meat of your choice season with salt, and pepper, and cook through. Add the cooked rice, and mix thoroughly. Pour in the tomato sauce mix, and let simmer for about 5 minutes.
Set peppers in a baking pan (if they wobble just cut a little bit of their bottoms off to give a steady base). Fill peppers with meat/rice mixture.
Place in the oven for about 20 minutes. Sprinkle the shredded cheese on top, and bake for about another 10 minutes or until cheese is melted.
Notes
You can also use green peppers for this. I just used what we had. The boil in bag rice is a real breezy cheat for portioned, and perfectly cooked rice in a flash. You can also use any kind of ground meat you like such as chicken, pork, turkey...whatever you like. Well this is my first time posting a recipe I hope you guys like it.
