what you need
- 2 eggs
- 1 12 ounce can evaporated milk
- 1/2 cup canned pumpkin
- 2 Tbsp. vegetable oil
- 1 tsp. vanilla
- 2 cups pancake mix
- 2 Tbsp. brown sugar
- 2 tsp. cinnamon
make it
Mix all wet ingredients in large bowl. Mix all dry ingredients in another bowl. Add the dry ingredients to the wet ingredients and lightly mix.
Put 2 Tbsp. of the mixture on a hot, lightly greased griddle or frying pan. Flip the other side when lightly browned.
Serve with maple syrup.
