what you need
- 5 lb. chuck roast (arm cut)
- 1 tsp. oregano
- 2 cans Campbell's Onion Soup
- 2 cans beer, divided
- 2 shots bourbon
- 1 tsp. Italian seasoning
- 1 tsp. ground pepper
make it
Rub roast with oregano (do not add salt). Bake at 500 degrees F for 1 hour uncovered. Cool and refrigerate overnight.
Next day, slice roast thin, put into covered roasting pan. Pour Campbell's Onion Soup, 1 can beer and bourbon over sliced beef. Add Italian seasoning and pepper. Bake covered at 325 degrees F for 4 hours. After 3 hours add 2nd beer if low on juice.
Serve on fresh poorboy buns or French bread, topped with Kraft Shredded Mozzarella Cheese and ENJOY!

I like to transfer this to a crock-pot set on low when it's done to keep warm for my guests.
