what you need
- 1 can salmon, with bones and liquid
- 2 whole eggs
- 1 sleeve RITZ Crackers Dried Tomato Flavor
- Olive oil
make it
In a medium glass or plastic bowl flake the salmon into small pieces. Add eggs and blend with salmon. Crush RITZ Crackers until fine and add to fish mixture. Blend well.
Cover and refrigerate for 30 minutes. After 30 min. remove mix from fridge.
Heat pan over medium heat with 2 Tbsp oil. Make 6 to 8 patties of fish mixture. Brown patties on each side and heated through. Drain on paper towels. Serve warm or room temp.
Notes
Mix with a spoon.
Make sure fish and crackers are small pieces.
When making patties use oil on your hands to keep mix from sticking.
Add oil to pan when frying to aid in browning.
Can be made bite size to serve as appetizers.
Goes great with Kraft Mac-N-Cheese Dinner and sweet potato sides.
Can be refrigerated or frozen.
