what you need
- 1 baked 9-inch pie shell
- 1 qt. vanilla ice cream
- 1 cup canned pumpkin
- 3/4 cup sugar
- 1/2 tsp. salt
- 3/4 tsp. pumpkin pie spice
- 1 cup heavy cream
- 1 tub Cool Whip or whipped heavy cream
make it
Spread ice cream in baked cooled pie shell. Place in freezer until hardened.
Blend together pumpkin, sugar, salt and spice. Whip cream until stiff and fold into pumpkin mixture.
Spoon pumpkin mixture into frozen pie shell over the ice cream. Top with Cool Whip or whipped cream.
