what you need
- 4 (6 oz.) tilapia fillets
- 2-3 Tbsp. flour
- 1/4 cup finely diced onions
- 1/2 cup butter
- 1-1/2 Tbsp. capers (optional)
- 1/2 cup white wine
- 4 oz. fresh lemon juice
- Salt & pepper to taste
- 1/2 bunch parsley, finely chopped
make it
In a very hot 12" frying pan, place lightly floured tilapia fillets and sear on one side until golden brown. Turn after 3-4 minutes.
Add onions. When onions are translucent, add butter, capers, white wine and lemon juice. Add salt and pepper.
Reduce heat to medium and let simmer for no more than 5 minutes. When consistency of sauce becomes silky, add the minced parsley.
Notes
This makes an easy but elegant dinner when served with asparagus and risotto or boiled new potatoes.
