what you need
- 2 lb. ground beef
- 1/2 pkg. saltine crackers (put in plastic bag and use rolling pin to crush)
- 1/4 cup all purpose flour
- 1/2 cup water
- 2 eggs, lightly beaten
- 1/4 cup KRAFT Original Barbecue Sauce
- 24 carrot slices
- 1/4 cup peas
- 1/4 cup green beans
- 1/4 cup corn
make it
PREHEAT oven to 400°F. Mix meat, cracker mix, flour, water, eggs and barbecue sauce.
SHAPE meat mixture into four separate pieces, shape engine and three box cars separately (use spoon to make indentation for veggies).
BAKE 40 min. or until cooked through. Arrange three carrot slices on each side of engine and cars. Fill each box car with peas, green beans and corn.
Notes
I first saw this in a magazine 38 years ago and made it for my son, it came out great and he loved it but quickly grew up and we all forgot about the train meatloaf. My 2 yr old grandson loves Thomas the train and I remembered the recipe so I made one for him last week and he was thrilled. I took a digital picture so if there is a way to attach it please let me know.
