- 3/4 cup brown sugar
- 3/4/cup granulated sugar
- 1 cup butter or margarine
- 2 large eggs
- 1 tsp. vanilla
- *2 1/4 cup gluten free flour mix*
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. xanthan gum
- 1 package any chocolate chips or baking chips that you prefer
- * Gluten free flour mix*
- 2 parts white rice flour
- 2/3 parts potato starch
- 1/3 parts tapioca flour

Beat sugars and butter together until creamy and then add the eggs and vanilla until mixed well.
Mix the gluten free flour mix, salt, baking soda and xanthan gum together and add it to the butter mixture mix well. Add the baking chips of your choice.
Bake in 375°F oven for 8-10 minutes. Remove and cool on a rack. Keep cookies in the fridge or freezer.
Notes
This is an awesome gluten free cookie recipe, it tastes just like the real thing. If you find that your cookies are running instead of cooking in a formed cookie you will want to, add another 1/2-1 tsp. of xanthan gum, that is what keeps them together! The astricks are to notify you what the gluten free flour mix is made of. You mix that first and you add 2 1/4 cups of the mix in place of the gluten free flour mix.
