what you need
- 1/4 cup maple syrup
- 1/2 cup barbecue sauce
- 10 slices center-cut (30% less-fat) bacon
- 1/2 small onion
- 1 pound boneless skinless chicken breast
- 20 chunks fresh pineapple (you can buy cored, peeled pineapple)
- 20 (6-inch) bamboo skewers
make it
1. Preheat broiler. Coat broiler-pan rack with nonstick cooking spray. Soak twenty 6-inch bamboo skewers in warm water for 20 minutes. Combine maple syrup and barbecue sauce. Set aside.
2. Cut bacon in half crosswise. In batches, cook bacon in skillet over medium heat about 3 minutes per side until lightly cooked but still flexible. Place on paper towels; let cool. Cut onion into wedges; separate pieces. Microwave 20 pieces on a plate on HIGH for 30 seconds.
3. Cut chicken into 20 pieces, 1 inch each. Wrap cooked bacon piece around chicken. Thread 1 onion piece onto skewer, then chicken, then pineapple. Repeat for other skewer. Divide maple-BBQ sauce in half. Brush skewers with half the sauce.
4. Broil skewers 4 inches from heat for 4 minutes remove from oven and turn over. Brush with other half of sauce. Serve warm.
