what you need
- Olive oil
- 2 lb. lean ground beef, cooked & drained
- 1 can (28 oz.) crushed plum tomatoes
- 10 chopped garlic cloves (more or less depending on your taste)
- Ground thyme (again, to your taste)
- Dried basil (to taste)
- Coarse ground black pepper (to taste)
- Red pepper flakes (large pinch or two)
- 1 large can low sodium chicken broth
- 1 cup white wine (or to taste)
- 2 bags frozen collard greens
- 1 small bag baby carrots (whole or sliced)
- 1 small bag frozen pearl onions
- 1 small bag frozen peas & corn
- 1 sweet potato, sliced & quartered
- 2 or 3 cans canella white beans
- 2 big handfuls Kraft Romano Cheese (towards the end)
make it
Combine all ingredients in a large pot. Let simmer, lid slightly askew, for about 45 minutes or until potatoes are tender.
Serve in a big bowl, sprinkle a little more Kraft Romano cheese on top. Serve with crusty bread. Fabulous!
Notes
When I make this on a cold & rainy night, EVERYONE (kids included!) line up for seconds...there never seems to be enough!!
So many people have asked me for this recipe. I thought maybe some of you might enjoy it too!
Play around with it a little, to suit your family's tastes. That's what cooking is all about.
