Grandma Kirk's Oatmeal Date Cookies

what you need
- Date Filling:
- 1 lb. dates, chopped
- 1 cup brown sugar
- 1 cup water
- Cookie Dough:
- 2 cups brown sugar
- 1 cup shortening
- 2 eggs
- 3 cup oatmeal (quick but not instant)
- 3 cups flour
- 1 tsp. baking soda dissolved in 1/4 cup hot water
make it
Cook together date filling ingredients until thick. Preheat oven to 350°F. Cream brown sugar and shortening. Add eggs one at a time. Add oatmeal, flour, and water mixture alternately until completely mixed. This makes a very stiff dough.
Roll out on a lightly floured counter to 1/4 inch thick. Cut out with a small to medium round cookie cutter. (You must use the same cutter for all cookies because this is a "sandwich" type cookie.)
Bake 12-15 minutes until golden brown, but not too dark. Cool cookies completely. Then spread about 1 heaping tsp. of date filling on one cookie and top with another cookie.
Notes
The individual cookies will be quite crisp when cooled. Fill them a day or two before you want to eat them and place in an airtight container. The filled cookie will soften up "just enough".
This is a very old recipe, and one of my favorites, and, yes, my Grandma Kirk really did make these cookies every year. One of these cookies is hearty enough for a quick breakfast on the run. If you are serving them for dessert you may want to us a smaller round cutter. ~Jan~
