Easy Chicken Noodle Casserole

what you need
- 1/2 stick butter
- 2 large boneless skinless chicken breasts, cubed into very small pieces
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 small can mushroom pieces (optional)
- 1 Tbsp. parsley
- 1 cup Breakstone's or Knudsen Sour Cream
- 1 can Ro*Tel diced tomatoes
- 1 can cream of mushroom soup
- 1/2 pack spaghetti, broken in half, boiled
- 2 1/2 cups Kraft Shredded Cheddar Cheese
- Seasoning to taste

On medium heat in a skillet brown chicken, onions, bell pepper, mushrooms and seasoning in butter until chicken is cooked and onions are soft. Add sour cream, stir well. Add Ro*Tel tomatoes, stir well. Add cream of mushroom soup, mix all well.
Grease a glass 9x13-inch dish. Add boiled noodles, then add the chicken mixture, stir well until it is evenly mixed. Top with Kraft Shredded Cheddar Cheese.
Bake at 350 degrees F until cheese is completely melted, approximately 15 minutes.
Notes
You can also freeze this dish after cooking to serve on another occasion.
The noodles can be boiled as the chicken is cooking to cut down on prep time.
My family loves this dish, it's creamy and cheesy, their favorite!
