what you need
- 1 pkg. Oscar Mayer Roasted Chicken Strips
- 1/2 cup each diced mango and papaya
- 1/4 cup pineapple tidbits, reserve 1 tablespoon juice
- 3 tablespoons slivered almonds
- 2 tablespoons diced red onion
- 3 tablespoons chopped fresh cilantro
- 1/4 teaspoon lime pepper
- Salt to taste
- 2-3 tablespoons Miracle Whip Salad Dressing
- Lime wedges
make it
Cut chicken strips into bite-size pieces and put in a 1 1/2 quart bowl. Dice mango and papaya. Add mango, papaya, pineapple, and slivered almonds to chicken. Dice red onion and cilantro. Add to chicken and fruit and toss lightly.
Combine reserved pineapple juice, lime pepper, salt and Miracle Whip in a small bowl. Pour over chicken mixture. Toss until evenly coated.
Cover and chill for at least 2 hours before serving. Garnish with lime wedges.
Notes
Only use fresh cilantro. Dried parsley does not do this dish justice.
My son is my food critic (he is only 12, but considers himself a "Food Network" conesur). I had never used fresh herbs before, but decided to try a change with this recipe. He told me, "This is the best "fruity stuff" you ever fixed."
