what you need
- 1 bag beef fajita mix (1.6 lb.) includes beef, onions, green peppers, and tortillas
- 1 small can tomato bisque soup undiluted
- 1 small can cream of potato soup undiluted
- 2 cans chicken broth (14 oz.)
- 1/2 tsp. cumin
- 1 can red beans, drained and rinsed
- 1/4 cup instant buttery mashed potato mix
make it
Cut fajita beef strips, onions, and peppers into cube sizes pieces and saute in deep skillet until heated through.
Mix tomato soup, potato soup, chicken broth, and cumin. Pour into above mixture. Add red beans. Heat to boiling.
Cut 3 tortillas into thin 2 inch long strips. Add these to the above boiling mixture and turn heat down to med. Cook for another 10-15 minutes. Remove from heat and add 1/4 cup instant buttery mashed potato mix.
Notes
This makes a very creamy smooth tasting soup. Additional chicken broth may be added for a thinner soup.
