what you need
- 3 eggs, beaten
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 3/4 cup flour
- 2 cups 2% or whole milk
- 3 tablespoons butter, melted
make it
Beat the eggs well and add sugar, salt, flour and the milk. Then add the melted butter and blend all together well. Batter will be thin and slightly lumpy.
On a greased griddle or crepe pan, pour about 2 tablespoons of the batter and make tiny, thin pancakes. There is no need to flip pancakes because it will cook through due to the thinness.
Then roll up and serve with powdered sugar, syrup or fresh fruit.
Notes
My great-grandmother obtained this hand-written recipe from a Swedish neighbor at the turn of the century. It has since been in my family, and everyone always looks forward to this special brunch treat!
