what you need
- Dough
- Flour
- 1 can refrigerated biscuits (10 count)
- 1/2 cup packed light brown sugar
- 2 teaspoons cinnamon
- 1/3 stick butter, softened
- 1/3 cup raisins, optional
- Icing
- 1/2 stick butter, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2 ounces Philadelphia cream cheese, softened
make it
1. Preheat oven to 400°F. Flour countertop. Place biscuits in two overlapping rows of five biscuits to form rectangle. Press biscuits flat with hand to seal seams and dough is about 1/4 inch thick.
2. In a small bowl, combine brown sugar and cinnamon. Spread 1/3 stick softened butter over flattened biscuits. Sprinkle cinnamon sugar mixture over buttered dough. Sprinkle raisins over top.
3. Starting at long edge, roll dough up like a jelly roll. Pinch seam to seal.
4. Cut roll into 8 slices, discarding the 2 end pieces. Lightly grease 8 inch cake pan. Place 8 rolls into pan.
5. Bake for 10 minutes, or until golden brown. While still hot, invert pan on serving plate. Lift pan and scoop any remaining filling over top of cake. Allow to cool slightly.
6. Beat icing ingredients with electric mixer until fluffy. If icing is too thick, add a teaspoon of milk at a time until desired consistency is reached. Spread over cake. Serve warm.
