Slow Cooker Chicken Enchiladas

what you need
- 1 lb. chicken
- 1 can chicken broth
- 2 cans enchilada sauce, divided
- 2 cups shredded cheddar or fiesta blend cheese, divided
- 8 soft taco tortillas
make it
Place chicken in slow cooker with chicken broth. Cook on low for 6 hours.
Once chicken is tender and falling apart, place chicken in a skillet. Add 1 can of enchilada sauce and 1 cup of cheese to skillet. Mix until chicken is shredded and cheese is hot and bubbly.
Place 2 spoonfuls of chicken mixture in the center of each tortilla. Roll up and place seam side down in a baking dish. Pour additional can of enchilada sauce over rolled tortillas. Sprinkle with remaining cheese.
Bake at 450 degrees F for 20 minutes, until cheese is melted and desired brownness.
Notes
Can also substitute beef roast for chicken.
