what you need
- 1/2 cup green onions, chopped
- 1/2 green pepper, chopped
- Seasoned salt and pepper
- 1/2 cup spinach raw
- 1 lemon
- 4 eggs (may substitute egg beaters)
- 2 Tbsp. milk (may substitute skim milk, water, or cream)
- 4 slices bacon, fried or microwaved
- 1/4 pound sausage fried or microwaved
- 1/2 cup Kraft Colby Jack Cheese
- 1/2 cup Kraft Mozzarella Cheese
- 1/2 avocado, sliced
- 1/4 cup feta cheese

Cook onions and bell pepper in microwave in water for 5 minutes. Drain water off, sprinkle with seasoned salt and pepper and set aside.
Wash spinach in salt water and remove stems; drain. Sprinkle seasoned salt and pepper over spinach and sprinkle lemon juice.
Mix eggs and milk and pour into medium hot skillet. When eggs begin to set, add meat, 1/2 cheeses, onion and bell pepper. Add sliced avocado and spinach and rest of cheese. Turn and fold in half and cook to set. To prevent omelet getting too dark, finish by baking in microwave 30 seconds.
Notes
Add green jalapeno pepper sauce if desired.
