what you need
- 1 (9-nch) pie crust, graham or sugar
- 1 large can apple pie filling, enough to fill pie crust half way**
- 2/3 cup caramel topping, divided
- 1 pkg. (8 oz.) cream cheese, softened
- 2 eggs
- 1/2 cup sugar
make it
Preheat oven to 425 degrees F. Fill pie crust half way with apples, reserve 8 slices. Drizzle with 1/3 cup of caramel. (You can use more to taste but it will thin the apples and make more liquid in the finished pie.)
Mix cream cheese, eggs and sugar till smooth and pour over apples. Swirl the remaining 1/3 cup of caramel over the cream cheese mixture. Place reserved apples around edge of pie.
Reduce the oven to 325 degrees F and bake about 45 minutes or till lightly golden and center is set. Center will be firm and not “jiggle” when pan is lightly shook. Cool completely before storing in fridge or center will crack.
Notes
This is my husbands all time favorite pie. It is very simple to make and has few ingredients.
**or cook 4 cups fresh, peeled, cored, sliced apples seasoned to taste with sugar and cinnamon in butter till soft.
