what you need
- 6 large eggs
- 3 pints heavy whipping cream
- 1 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. black pepper
- 2 deep-dish pie shells
- 3/4 cup chopped onion
- 1-1/2 lb. cooked and crumbled bacon
- 2-1/2 cups shredded Lorraine Swiss cheese
- Nutmeg

Thaw crust 15 minutes at room temp, while preheating oven to 350 degrees F. Whisk eggs, cream, and seasonings and set aside.
Layer each pie shell with: onion 1st, then bacon, then cheese. Slowly pour in cream mixture, so cheese doesn't rise. Sprinkle tops with nutmeg. Tap any floating cheese down with a fork.
Bake on center oven rack for 50 to 60 minutes, or until a knife inserted in center comes out clean. Cool for 15 minutes and serve. Or serve cold with a salad and fresh fruit…ENJOY
