what you need
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 3/4 cup canola oil
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs whites
- 1 teaspoon vanilla
- 1-1/2 cups regular oatmeal (not one-minute or instant)
- 1/2 cup raisins, chocolate chips, mini M&Ms, dried cherries or cranberries (optional ingredients)

1. Preheat oven to 375 degrees F.
2. In a bowl, combine the flour and baking powder
3. In another bowl, mix together the canola oil, white and brown sugars, eggs whites and vanilla.
4. Add the flour mixture to the wet ingredients and mix well on low speed for a minute, then add the oatmeal and mix for a couple of minutes on low.
5. Add any optional ingredients like raisins, chocolate chips and stir with a spoon to blend in.
6. Lightly spray cookie sheet with canola spray. Using 2 large spoons, scoop the dough onto the cookie sheet in heaping spoonfuls. The cookies will spread out when cooking
7. Bake for about 7 minutes or until light brown around the edges (they won’t be golden on top). Keep a close eye on these when they start getting brown on the edges, they cook quickly. I usually switch the cookie sheets around when they start getting brown on edges (move the sheet on the top rack down to the bottom rack and move the sheet on the bottom rack up to the top rack).
Notes
These will be a little chewy.
