Rice Croquettes (Suppli al' Telefono)

what you need
- 1 cup cooked rice
- 1/2 cup basic tomato sauce
- 1/4 cup grated parmesan
- 2 tablespoons cooked peas
- 2 Tbsp. chopped mushrooms such as porcini, Cepes, or cremini
- 1 oz. mozzarella, cut into 2 chunks
- 1 cup flour
- 1 egg, beaten
- 1 cup unseasoned bread crumbs
- Vegetable oil for deep frying

Mix first 5 ingredients in a mixing bowl. The mixture should hold together when shaped into a ball. If not, add some bread crumbs.
Shape two balls about the size of a large egg. Push the mozzarella into the balls so that it is in the middle of the balls. Roll the balls in flour, then in the egg mixture, then coat them evenly with bread crumbs. Refrigerate for about 30 minutes.
Carefully drop into 375 degrees F oil making sure the balls are completely submerged, and fry until golden brown, about 2 minutes. Drain on paper towels and serve immediately.
Notes
When biting into these croquettes, as you pull them away from your mouth, the chunk of melted mozzarella will string out, resembling a telephone line, hence the name suppli al' telefono.
