South of the Border Mac 'n Cheese

what you need
- 1 box Kraft Mac 'n Cheese
- 1/2 small onion, diced fine
- 1 clove garlic or 1 tsp. minced garlic in a jar
- 1-2 Tbsp. olive oil
- 1 lb ground beef - 85% is good
- 1 jar medium salsa
- Extra Velveeta if needed

Prepare Mac 'n Cheese according to directions, cover pan and set on warm setting. Check to be sure it doesn't scorch. While macaroni is cooking start the sauce.
Saute onion and garlic in the olive oil and the drain the oil. Add the ground beef and brown, draining any excess oil from pan when cooked through. Add the salsa and heat.
When meat mixture is hot, pour directly into the Mac 'n Cheese, stir and serve.
Notes
Use mild to hot salsa depending on how hot you like it or use mild and put hot sauce on table and let each one season their own serving.
If you like a lot of cheese, add some Velveeta cheese cut up in small cubes to mix and stir to melt.
