Mexican Fiesta Taco Salad

what you need
- 1 lb. lean ground beef
- 1 pkg. taco seasoning
- 1/2 small/medium onion
- 1 large tomato
- 1/2- 16 oz. block Monterrey Jack/cheddar cheese
- 1 small can sliced black olives
- 1 small jar green olive with pimentos
- 1 regular size can ranch style beans
- 1 small bottle Catalina dressing
- 1 bag Doritos Nacho Flavor OR 1 pkg. (12 count) flour tortillas
- Optional toppings:
- Sour cream
- Avocado
- Salsa

Brown your ground beef, drain and add taco seasoning per directions. Set aside. Dice onion, tomato, and cheese. Slice green and black olives.
Get a large bowl. Mix onion, tomatoes, cheese, black and green olives and beans all in bowl together. Add taco meat and mix well. Add small bottle of Catalina dressing. Mix well.
To serve:
You can serve this three ways:
1. In a bowl heated then add toppings.
2. Hot or cold and put in a tortilla.
3. Hot or cold spooned over about 1 handful of Doritos.
Notes
This is a versatile dish. It is great as a warm supper and then cold leftovers in a tortilla are excellent lunch or snack. You can change the flavor of the Doritos or the tortillas for some extra pizzazz! You can also use reduced fat products to cut back on some calories.
