what you need
- 1.5 lb. ground beef
- 1 cup fresh bread crumbs
- 1 small onion, diced
- 1 egg, lightly beaten
- 1 pinch salt (less than 1 tsp.)
- Pepper (about .5 tsp)
- 2 cans (8 oz. each) tomato sauce, divided
- 3 tablespoons vinegar
- 3 Tbsp. brown sugar
- 2 Tbsp. Dijon mustard
- 2 Tbsp. Worcestershire sauce
- (.5 cup of water to thin if necessary - but I have never needed it)
make it
Preheat oven to 350 degrees F. Mix together the beef, bread crumbs, onion, egg, salt, pepper, and .5 cup of the tomato sauce.
Stir together in a separate bowl the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire sauce, and the water if it is too thick. Pour this sauce over the meatloaf.
Bake for 1 hour, basting every 15 minutes with pan juices.
Notes
This is amazing. Once I was tried this, I have never made another kind of meatloaf and my husband and kids ask for it every week.
