what you need
- 3 eggs
- 1/4 cup white sugar
- 1/4 cup white vinegar
- 2 Tbsp. butter or margarine
- 2 handfuls green or red grapes
- 2 med peaches or nectarines
- 2 med pears
- 2 med apples (Fuji, has great flavor)
- 1/4 cup chopped nuts (walnuts, almonds, pecans your choice)
- 2 cups Kraft Jet-Puffed Mini Marshmallows
- 1 tub (8 oz.) Cool Whip
make it
In a double boiler combine eggs, sugar and vinegar. Stirring constantly with a whisk cook until mixture reaches 160 degrees F, should be gelatinized. After mixture is removed from heat add the butter or margarine, set aside and let cool.
Cut up all fruit in to bite size pieces place in large bowl. Chop nuts and add to fruit (nuts can be omitted). Once mixture is cooled add to fruit and stir.
Place in refrigerator for at least 4 hours or overnight. When you are ready to serve, fold in marshmallows and Cool Whip. Eat and enjoy.
Notes
The vinegar breaks down the fresh fruit so that is why you wait the 4 hours or overnight.
It is important that you stir egg mixture constantly and keep on med to med high heat or eggs will scramble, you want them to gelatinize not scramble.
