what you need
- 4 fresh tomatoes, chopped, drained
- 1 red pepper, chopped
- 1/2 green pepper, chopped
- 1 med. red onion, chopped
- 1-1/2 cups frozen corn, thawed
- 1-15 oz can black beans, rinsed, drained
- 1 bunch cilantro, chopped (about 1/2 cup)
- 3 jalapeno peppers, seeds removed
- 1 tsp. salt
- 1 tsp. cumin
- 1/3 cup lime juice
- 1/3 cup olive oil
make it
Chop tomatoes and drain well. Put in large bowl with the chopped peppers and onion. Thaw the corn and add to the bowl.
Rinse and drain the black beans well and add to the bowl. Wash the cilantro, remove leaves. Chop leaves and add to the bowl. Remove seeds from jalapenos. Chop fine and add to the bowl.
Add the remaining ingredients. Mix well. Serve immediately at room temperature. Absolutely wonderful served with fresh-made tortilla chips.
Notes
To make chips, cut white corn tortillas into triangles. Deep fry in 1" oil in deep pan. Drain well and salt lightly. Enjoy
