Yummy Beef Vegetable Soup

what you need
- 1 lb. ground beef
- 1 pkg. Spanish rice mix
- 1 can (15 oz.) whole kernel corn
- 1 can (15 oz.) mixed vegetables
- 1 can (14.5 oz.) tomatoes & green chiles
- 1 can (14.5 oz.) diced tomatoes
make it
Brown meat, drain.
Add Spanish rice mix plus the amount of water indicated on the package. Cook according to rice directions.
Add all remaining ingredients, heat through and serve.

This is excellent with cornbread! I originally got this recipe when a woman from our church brought it to our family when I was sick. She called it Five Can Soup as the original recipe doesn't call for meat and was developed when you could buy Spanish rice in a can too. With a husband and three sons, not many meals are acceptable without meat so I added the ground beef and we love it. I also cooked this for lunch at a school I worked at for several years...the kids loved it and often requested seconds! The name I've given this recipe comes from trying to entice the kids to try it...yummy! Note, like most soups it best when cooked the day before you plan to serve it. Just reheat and eat...yummy!
