what you need
- 10 oz. packaged tortellini
- 8 oz. Monterey Jack chunk cheese, divided
- 4 chicken breasts, cooked and cut up
- Plate of flour
- 1/4 cup butter (used for browning chicken)
- 3/4 cup onions
- 1 tablespoon chicken bouillon
- 1 can chicken broth
- 1 teaspoon sugar
- 1 small can mushrooms
- 1/2 cup sour cream
make it
1. Preheat oven to 350 degrees F and grease 9 x 13 baking dish.
2. Cook tortellini 5 minutes less than package directions.
3. Put tortellini in baking dish and slice half of the Monterey Jack cheese over the tortellini.
4. Roll chicken in flour and brown in butter. Add onions and cook until glassy and lightly browned.
5. Heat bouillon, chicken broth, sugar, mushrooms, and chicken mixture in a separate pot. Cook slowly for 5 minutes.
6. Add rest of Monterey Jack cheese. When cheese is melted, add sour cream and blend.
7. Pour mixture over tortellini noodles.
8. Cover with foil and bake 30 minutes.
Notes
The recipe calls for 1/4 cup of butter, but I use less since it's only used for browning... maybe 1/3 cup.
