what you need
- 1 lb. ground beef
- 1/2 cup wheat germ
- 3/4 cup low-fat milk
- 2 large eggs
- 10 oz. box frozen peas & carrots
- 3 Tbsp. ketchup
- 2 Tbsp. chopped onion
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. ground nutmeg

Preheat oven to 350 degrees F and lightly grease a 12-muffin baking tin. In a large bowl, combine all ingredients.
Fill muffin cups 3/4 full.
Bake 30 minutes or until meat is firm.
Notes
I serve these with mashed potatoes, brown gravy, and crusty bread.
