what you need
- 3 skinless boneless thighs
- Salt and pepper to taste
- 2 or 3 red potatoes
- 1 can (10 ounces) chopped tomatoes and chilies - mild (do not drain)
- 1 1/2 tablespoons tomato sauce
- 3 teaspoons Smart Balance Light (or your butter of choice)

Preheat oven to 375°F. Use an 8x8 baking dish. Salt and pepper chicken thighs. Pour in can of tomatoes and chilies and tomato sauce into baking dish.
Cut potatoes into bite size pieces. Place in half of the potatoes. Place the thighs in the dish. Place remainder of potatoes in dish. Salt and pepper to taste. Place 1 teaspoon of Smart Balance Light on top of each thigh (or your butter of choice).
Cover dish with foil and bake for 55 minutes. Let dish set for 10 before serving.
Notes
Can add: green pepper before baking or cooked corn on the cob after baked.
A great side dish is steamed green beans.
Don’t forget the cornbread, it will soak up the juice and taste great.
