what you need
- 1 cup flour
- 2 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1 cup milk
- 2 Tbsp. oil
- 1 Tbsp. vanilla extract
make it
Mix first (4) ingredients together. Beat egg with milk, oil & vanilla then add to flour mixture.
Add oil or cooking spray to your medium heat pan.
Pour your preferred pancake size and let sit. Do not flip until you see the air bubbles in the pancakes popping.
Notes
Make sure to not over mix! The key to great pancakes is the lumps. There need to be lumps in the batter for the pancakes to be fluffy.
I sometimes use Whole Wheat flour to make it a bit healthier. Just as good and my family doesn't know the difference.
