Cindy's Chicken Fried Rice

what you need
- 3 cups instant rice
- 1/2 medium onion, chopped
- 2 Tbsp. butter
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1 cup cooked chicken, cubed
- 3 eggs, scrambled
- 3 Tbsp. soy sauce
- Salt and pepper to taste

In medium sauce pan prepare rice as directed on box.
Meanwhile, chop onion into small pieces. In a large frying pan, melt butter. Add onions, peas, and corn to frying pan and saute on medium heat for 10 minutes. Add chicken and cook for another 2 minutes. Move everything to one side of the pan.
In the other side of pan, pour the eggs, scramble them until mostly cooked and then blend them with everything else. Make ingredients into a well. Slowly pour a little rice at a time into the pan, mixing as you go. Add the soy sauce a little at a time continuously stirring until well blended. Put heat on low and add salt and pepper to taste. Let cool for 5 minutes before serving.
Notes
This can make a big mess but if you clean as you go it is not as bad. And make sure you keep stirring! It will stick and ruin the whole thing if you don’t.
For a more Chinese food flair, fry some chicken using pancake batter in the fryer and cover it with sweet and sour sauce. Your family will love you.
