what you need
- 1 can (15 oz.) chickpeas, drained
- 1 can (14 oz.) chicken breast meat, reserve liquid
- 1 tsp. black pepper
- 1 tsp. dried cilantro
- 2 Tbsp. hoisin sauce
make it
In a small sauce pan, combine drained chickpeas, reserved chicken breast liquid, pepper, cilantro, and hoisin sauce. Stir to combine.
Turn burner on high until liquid begins to boil. Reduce heat to low, cover and simmer, stirring occasionally, for about 15-20 minutes or until chickpeas start to soften.
Add chicken breast meat and stir to break up chunks. Recover and let cook for another 10 minutes for chicken to heat through.
Notes
This is a recipe I came up with after coming home from class and wanting something simple to eat. I rummaged through my cupboards and decided to be adventurous!
