Bacon Mushroom Jack Chicken

what you need
- 6 chicken breast filets
- Blackening seasoning (can use pepper melody)
- 6-8 sliced fresh mushrooms (or 1 jar sliced mushrooms)
- 1 medium onion, cut in strips
- 1-2 Tablespoons olive oil
- 6 slices cooked bacon cut in half (to equal 12 pieces)
- 6 slices Kraft Monterey Jack cheese
- 1 Tablespoon water

Coat chicken breasts with blackening seasoning or pepper melody and set aside. In skillet saute mushrooms and onions in oil over medium heat until onions are clear then remove from heat (approximately 10 minutes).
In same skillet, cook seasoned chicken breasts over medium high heat turning once and browning on each side until done (approximately 10 minutes on each side).
Lay 2 half slices cooked bacon on each breast. Cover with onions and mushrooms then cover with a slice of Monterey jack cheese. Add one tablespoon water to pan to create steam. Cover with lid until cheese melts.
Notes
Serve with salad and baked potato for a delicious quick dinner.
Can also prepare without onions and mushrooms so kids love it.
