Apple Gingerbread Upside Down Cake

what you need
- 1/2 cup fat
- 1/2 cup boiling water
- 1 cup molasses
- 2 1/2 cups flour
- 1 1/2 tsp. ginger
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3-5 firm apples
- 2 tsp. cinnamon mixed with
- 1/3 cup sugar
make it
Melt fat in boiling water. Add molasses. Sift flour, ginger, baking soda and salt together and add to first mixture. Beat vigorously. Peel and slice apples.
Arrange the apples, cinnamon and sugar in a buttered baking dish or heavy pan. Pour gingerbread mixture over the apple mixture.
Bake in moderate oven (350°F) for about 45 minutes. Turn the cake out carefully, upside down.
Notes
Serve hot with hard sauce or whipped cream.
