what you need
- 1 cup/2 sticks softened salted butter*
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 pinch of salt
- 2 cups flour
- 2 cups oatmeal
- 1 mid-size bag chocolate chips
- Crushed walnuts, to taste (optional)

Preheat the oven to 350°F. In a large bowl, cream together your butter and sugars. Make sure they're mixed well! Add the eggs and blend until completely mixed. Add the baking soda, cinnamon, vanilla, and salt -- stir well. Fold in the flour (I usually do half a cup at a time). When that's mixed properly, put in the oatmeal. Stir that until it's pretty well mixed (it's going to be tough to stir - it's a pretty thick dough), and then add the chocolate chips and the walnuts. Make sure that those are evenly distributed throughout the dough.
Roll the dough into 1/2" balls and place on a greased** cookie sheet.
Bake for 12-15 minutes, or until the middle isn't shiny anymore.
Notes
*I usually make cookies after work, so I leave the butter on the counter in the morning, and by the time I come home, it's perfectly softened and ready to use. This was not included in the prep time.
**If you spray a bit of cooking spray onto the sheet and spread it around with a paper towel, it works quite well, and it doesn't make the cookies greasy. :)
