what you need
- 1 lb. ground beef
- 1 sm. onion, chopped
- 1 envelope taco seasoning
- 1 box shell or elbow macaroni pasta, cooked and drained
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (15 oz.) diced tomatoes
- 1 can (11 oz.) nacho cheese soup or cheddar cheese soup
- 1/4 cup taco sauce
- 1/2 cup crushed tortilla chips
- 1 pkg. shredded cheddar cheese OR other shredded cheese of choice

In a pan, brown ground beef and onions. Add taco seasoning following instructions on taco seasoning packet. Once prepared, drain excess grease.
In a bowl, combine cooked pasta, beans, tomatoes, soup, meat mixture and taco sauce. Transfer to a glass 9x13 baking dish.
Cover and bake at 350 degrees F for 25 minutes. Uncover and sprinkle with tortilla chips and desired amount of shredded cheese. Bake 5-10 minutes longer or until cheese melts.
Notes
I used medium-hot taco sauce for a slightly spicy kick and served with sour cream on the side.
