what you need
- 1 1/2 cups raisin bran cereal
- 1 cup 2% milk
- 2 eggs, slightly beaten
- 1/4 cup oil
- 1 1/2 cups finely chopped apples
- 1 1/2 cups brandied cranberry sauce
- 1 tsp. vanilla
- 2 1/2 cups flour
- 3/4 cup sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. grated orange peel
- 1/4 cup milled flax seed
make it
Combine cereal, milk, eggs, and oil and set aside for approx. 10 minutes. Line muffin tins with baking papers and preheat oven to 350 degrees F.
Mash up cereal mixture with a fork and add apples and brandied cranberry sauce. Stir in remaining dry ingredients. Spoon into muffin tins.
Bake for 18 min. or until toothpick comes out clean.
Notes
These are great served warm or cold. You may add your favorite margarine spread if you like. The cranberry/apple mixture adds moisture and zing to the healthy yet dull bran muffin. And the milled flax seed doubles your fiber and adds OMEGA 3-OILS.
