what you need
- 3 Tbsp. cornstarch
- 1 cup sugar
- 1/2 cup water
- 4 cups diced rhubarb
- 1 graham cracker crust
- 1 1/2 cups tiny marshmallows
- 1/2 cup whipped topping
- 1 package instant vanilla pudding
make it
Combine cornstarch and sugar; stir in water and rhubarb. Cook and stir until thick. Reduce heat; cook 2-3 minutes. Spread mixture onto graham cracker crust and allow to cool.
Fold marshmallows into whipped topping and spoon over rhubarb mixture. Prepare pudding and spread over all. Sprinkle with graham cracker crumbs (optional).
Chill for one hour.
Notes
May substitute other fruit for rhubarb.
