what you need
- 2 large chicken breasts
- 1 cup onions, chopped
- 1 can chopped mild green chiles
- 1 can (7 oz.) green chili salsa
- 1/2 tsp. salt
- 2 cups heavy cream
- Oil
- 12 corn or small flour tortillas
- 1 1/2 cup grated Monterey jack cheese
make it
Combine 1st four ingredients and mix well. Add salt to cream.
Heat oil, dip each tortilla and cook until done, then dip in cream and drain. Fill tortilla with mix. Roll and place in ungreased baking dish. Pour remaining cream over enchiladas. Sprinkle with cheese.
Bake at 350°F uncovered for 20-25 minutes.
