what you need
- 1 1/2 lb. boneless skinless chicken breast
- 8 slices bacon
- 2 cups (dry) elbow macaroni
- 1 box frozen spinach, defrosted (optional)
- 8 ounces shredded cheddar cheese, divided
- 1 pint sour cream
- 1 can cream of mushroom soup
- 10 ounces French fried onions, divided

Cut chicken into bite size pieces, cook in skillet, and set aside. Cut bacon into bite size pieces, cook in skillet, and mix with the chicken. Cook macaroni according to package directions, drain, and add to the chicken and bacon, then set aside.
In large bowl, add the defrosted spinach (put in microwave on high heat for 6 minutes, and then drain/squeeze WELL), 6 ounces of the cheddar cheese, the sour cream, cream of mushroom soup, and about 8 ounces of French fried onions. Mix well. I find it easiest to do this with my hands. When well combined, add to the chicken, bacon and macaroni mixture, and mix well again. In a well greased 9x14 pan, pour mixture in. Cover tightly with aluminum foil.
Bake for 35 minutes. Take the aluminum off, cover with the remaining cheese and onions, and continue baking for 5 minutes or until the cheese is melted. Let cool for about 5 minutes and enjoy!!
