what you need
- 1 Tbsp. olive oil
- 1 medium onion
- 1 pound Italian sausage
- 1 clove garlic
- 2 cans beef broth
- 2 cans Navy beans (do not drain)
- 1 head cabbage, cored and sliced
- 1 bay leaf

In a large soup pot, brown onion in heated oil. Add sausage, and brown until cooked through, breaking up the sausage into small pieces as it cooks.
Add garlic, and cook about 1 minute.
Add beef broth, beans, cabbage and bay leaf. Cook on medium-low heat until cabbage is tender, about 30 minutes. Remove and discard bay leaf.
Notes
This is great served with warm hard rolls.
My family prefers chunky style soups. This recipe can be adjusted to your liking - chunkier for a stew-like dish, or thinner for a broth-based soup.
