what you need
- 1 white or coconut cake mix
- 1 tsp. vanilla
- 1/2 tsp. coconut extract
- 2 cups BAKER'S ANGEL FLAKE Coconut, divided
- 12 oz. container cream of coconut
- 12 oz. tub COOL WHIP WHIPPED TOPPING
make it
Prepare cake mix as directed on the box. Add vanilla, coconut extract, and 1 cup coconut to the batter. Bake as directed on box.
Remove from oven and poke holes in the top of the cake. Pour cream of coconut (be sure to stir it up good if separation has occurred in the can) over warm cake and allow to cool completely.
Mix remaining coconut into Cool Whip and spread on cake. Store cake in refrigerator.
Notes
For a great variation on this I use a pineapple cake mix and a can of pina colada mix instead of cream of coconut.
