Fired Up! Italian Chicken Breasts

what you need
- 1 medium onion
- 1 medium green pepper
- 2 Tbsp. olive oil
- 2 dashes ground cayenne pepper
- 4 boiled/cooked boneless chicken breasts - not flavored
- 1 tsp. Italian seasoning
make it
Cut up onion in wedge slices and cut up green pepper in chunk pieces, you want both the veggies to be cut about same size.
Place the 2 Tbsp. olive oil in large skillet; on medium heat, then sprinkle with the 2 dashes of ground cayenne pepper. Add chicken until chicken is warm on skillet side and it will also begin to caramelize. Then flip chicken in skillet and sprinkle with half the Italian seasoning, cook until skillet side is warm and signs of caramelizing. Then flip chicken again.
Add cut up onion and green pepper, then sprinkle with remaining Italian seasoning. Continue to flip the chicken and stir veggies, when onion and green pepper are tender, your chicken is done.
Notes
This recipe is great by itself or served over a pasta of choice. I do serve with garlic bread, fresh slices of mozzarella and savory green beans.
